It is in the heart of the Black Mountain audoise, in Caudebronde, a small village of 200 inhabitants at 550 m altitude in the Aude in France, that Yoromiso, an artisanal company, has settled to manufacture its products.
I first came to in the Aude in 2003 where I developed, for more than 10 years, a range of organic, medicinal food products based on wild plants, ranging from vegetable pies to pestos, mixtures of dried plants to all kinds of Gomasio (a Japanese condiment based on grilled salt and sesame). I also made vegetable patties, gluten-free pastries, and plant fritters.
An enthusiastic consumer of miso since 1998 and without having the opportunity to find the quality and the real flavours of japanese Miso in France, I decided in september 2014, to train myself in the manufacture of miso according to traditional Japanese techniques.
During 30 months of research and training in Europe and Asia, a huge interest has developed around my project and i have the joy and honour to have the technical support of many japanese craftsmen, not only in France but also in Japan.
